LAKE FOOD COLOURS
Aluminum varnishes are pseudo-pigments formed by precipitating a synthetic or natural, water-soluble food coloring with aluminum hydroxide in the form of aluminum salt.
Food colour lakes are almost insoluble in water and can be processed like pigments, meaning they are easily dispersible in greasy media or dry mixtures.
They offer and are stable at pH 4 to 6. In general,
lake colours are more resistant to light and heat than the dyes from which they are obtained.
Their shelf-life ranges from 24 to 36 months.

The lake colours also comply with Commission Regulation (EU) No 231/2012 laying down specifications for food additives listed in Annexes II and III to Regulation (EC) No 1333/2008 of the European Parliament and of the Council.

Their applications include pharmaceutical dragées, food supplements / effervescent tablets, printing inks for food contact materials, cosmetics including decorative products and care products, medical products and confectionery.
Regulation (EU) No 380/2012 for aluminium-containing additives defines conditions of use and restrictions on the categories and quantities of use in food production.
